Awesome feedback!
Well the UTM is the # one thing, but I might want to use it for various purposes. Experiementing with security stuff is possible, maybe add pfSense or another firewall as an extra layer (with minimal settings compared to Sophos UTM).
I'm going to be experimenting with FTP servers, I am making an IP camera network, all that'd probably totally seperate though. I'm really not sure on the spot but it would be fantastic to have more network tools available (2012 seems to have a lot) and the option to tinker or add things on. I think it was you who talked about using Hyper V to manage CPU usage. I think the conversation was bout spreading loads over multiple CPUs or Cores, though that was probably for more than 2 so maybe doesn't matter for a dual core.
So it is an exact RAID mirror? Is that for performance or redundancy primarily? Is Essentials faster or preferable than the regular 2012 R2 install on this setup?

You need a minimum of 4 actual cores(HT doesn't count) if you want to run server2012...utm..and whatever else you want to run. if you want to run more than just the utm and server 2012 up the ram accordingly.
