WARN-726 VPN connection using Site-to-Site is down not sending

This is working for me.  Do you see whether this notice was sent in the Admin Notifications log?

Wie sieht denn so eine Meldung genau aus? Aktuell steht die Verbindung...

I see in notifier.log that the warning was processed.  I see in smtp.log that it was sent.

You've proven that the configuration for Notifications is correct in the UTM, Marita.  If you  receive a notification when you attempt to logon with invalid credentials, then you should contact Sophos Support.  If you don't then you might need to configure an 'External SMTP Server' on the 'Advanced' tab.
