There are two aspects to Sophos UTM anti-virus; one at the perimeter in the UTM, and the other in UTM Endpoint Protection in client PCs.  By default, each of these updates the pattern definitions automatically, but it is possible to configure them separately for whatever scheduled upload the customer requires, or to have it only done manually.  In Endpoint Protection, the administrator normally "locks down" the client configuration so that the enduser cannot change these settings.

The Enterprise Console is part of the "classic" Sophos product line.  The UTM product which I discussed in the previous paragraph was purchased from Astaro two years ago, and a portion of the "classic" Sophos Endpoint product was added to the UTM offering in version 9 which was released last year.

If you want more information on the Enterprise Console and the complete, classic Sophos Endpoint product, you should ask questions on that bulletin board.  Thos products aren't discussed in-depth here.

Is the Linux server download the definition update itself or is this the station were the Security Center console is installed (on Windows) and then it's deploy on the Linux server ?

If you're asking about the "classic" (non-UTM) version of Endpoint Protection, then the answer is both simpler and more-complex...

Although there is a different license for a Linux server than for a client PC, this is only a question of licensing.  The anti-virus on a server is the same as one on a client.  In some cases, it's not possible to count the number of client licenses a company needs, so a server license is sold.  This is not a difference in the underlying program code.

In the classic version, the Enterprise Console (EC) downloads the pattern definitions from the Sophos cloud.  The clients, both PCs and servers, then download from the EC.  If the EC isn't available, the clients will download from the Sophos cloud.  Obviously, it uses less bandwidth if local Endpoints download from the EC.

In the UTM version, until the newest version, UTM 9.1, all Endpoints downloaded directly from the cloud.  In V9.1, the option is now available to have Endpoints download from the Web Proxy cache in the UTM.
