There's no reason you can't do that... a network cable is a network cable, whether it's 2' long or 300' long.

That is a networking question; just trunk the VLANs needed between the two rooms. It's going to be a switch configuration issue, not a Sophos UTM issue. If this is in a commercial installation, you may want to get a consultant to help you if you're unfamiliar with how to get those VLANs "present" in each room.
As long as the HA port is on the same VLAN with the other HA ports (and they should be on their own VLAN / network segment), everything will work fine.
