given the history you are not going to be able to change the caching parameters in copernicus....at least at this time...
i doubt it. The ability to modify the caching parameters is something folks want but sophos made a decision that they have vehemently stood behind...I've challenged them behind the scenes and their decision on this is resolute barring a massive outcry and a serious drop in sales..both of which i highly seriously doubt are going to happen since it has been a loooong time since they went to an in-house proxy.

no we don't. Sophos has made http proxy tuning nearly zero. i gave up on it a while ago. http caching is not really that big of an issue any more as the vast majority of sites are dynamically generated.
It was more for the caching of Mac OS X / iOS and Windows updates, I have a few devices here at home and hate having to download the updates to each one - would be nicer if UTM could help out and cache, like the old Microsoft TMG used to.
