is it possible to configure auto-update to immediately perform an update after boot or logon? Or is this a default beahviour?

It is default behaviour to immediately check - so you're protected before accessing email and the Internet.
You would actually have to manually change Sophos AutoUpdate to stop the automatic check as described here: Sophos Anti-Virus for Windows 2000+: disabling updates on startup / power-up
