It is default behaviour to immediately check - so you're protected before accessing email and the Internet.
You would actually have to manually change Sophos AutoUpdate to stop the automatic check as described here: Sophos Anti-Virus for Windows 2000+: disabling updates on startup / power-up

The registry key:
[HKEY_LOCAL_MACHINE\SOFTWARE\Sophos\AutoUpdate]
"StartupDelay"=dword:0000000a
can also be set to control the behaviour. In the above example the AutoUpdate service would wait 10 seconds after starting before calling an update check.
