How do i setup a Custom Scan on a server via Sophos central

Please have a look at the Scanning options within the Threat Protection policy
Wildcards can be found here

Additionally, you can right-click on a folder --> Scan with Sophos Anti-Virus, to scan a specific location (if you are in front of the computer that is).

The scanning options section you refer to appears to only scan local logical disks, not a mapped drive or network share. You can exclude files, but there is no option to "include" additional files/folders.

Right clicking on a folder is far too labor intense for a weekly (or potential more frequent) scan.

You used to be able to create custom scans on the machine from within Sophos and save them, but this feature doesn't appear to exist anymore.

The available options in Central are the ones listed in my previous response. Custom scans are available for the SEC/Standalone version of Sophos.
