At Definitions & Users > Time Period Definitions, create your time period definitions. In the Web Filtering section, create your policies under the profile and set them with the Time Periods you created. For each of these policies, you can have a separate Filter Actions, where you can set what is allowed and denied. Click through the pages and settings in the Web Filtering section and you'll understand.
