Look in the 'Content Filter (HTTP)' log to see the FQDN of the chat server(s), then add that to 'Always block'. For Google chat, it's something like b.google.com.

Yeah for google chat b.mail.google.com is the url to block but i noted that this only works on IE browser, mind u the users will still be able to access google chat under other browser, i.e like mozilla
