Multiple Site to Site VPN tunnels with overlapping networks

Here is my situation

I have a Cisco ASA at our data center hosting a BDR solution for our clients who will be coming in via VPN.

We have a handful of new clients on board that all have like internal IP schemes (192.168.1.X). We want to setup double NATs on the client side so as to not have to alter the ASA configuration for every client we onboard. The clients will all be sold Sophos SG devices as part of their deals.

Any config ideas or already proven strategy I someone can point me to on how to configure the UTM side?
