I found the reason why (at least for me, not sure if there is a different use case that the login screen may not show up) and have a simple quick solution to get around it without having to restart your PC.
When you run the Sophos SSL Windows Client, it starts the User GUI as "SSL VPN Client for Windows..." and "OpenVPN Daemon..."
So, if for some reason the login screen is not showing up... Open your "Task Manager" (right click on Task Bar, and click on "Task Manager") and on the Processes tab, right click on "OpenVPN Daemon..." and End Task.
At this point on my side I just right click the SSL Sophos Icon (close to the clock on the Task Bar) and click "Connect" and the login screen shows up.
