I've tried changing our Virtual MAC's on all interfaces in HA but after a moment they change back. Anyone ever run into that?

My guess is that that's a good thing. I suspect that the only way to accomplish this is to first disable HA. After you make the changes and force any directly-connected devices to clear their ARP tables, re-enable HA and power-up the Slave. When the Slave is READY, everything should work as you want it.
Just curious - what is the reason for doing this?

I tried disabling HA and changed them but it ended up doing the same thing. I tried to re-use a configuration off another UTM HA setup for another setup then when I was testing it side by side I caught the conflict so I tried to change them to fix it. I've now left it disabled for a few days and I'm going to restart all equipment to see if it lets me change it after. I'll report back. I also have a case open with support.
