Client DHCP Option 60

You can't set a DHCP option on an interface. DHCP options are provided by a DHCP server and atken by an client that is configured as DHCP client.

DHCP option 60 is a client option (extension). When requesting an IP address from a DHCP server, with this option the client provides the vendor class identifier.

Need this because my inet provider (UPC / Inode) only assigns me an ip address in the VOIP subnet if the dhcp client identifies as "AVM DHCPC" (FritzBox).

No, this isn't possible (at least not in the GUI).
It might be possible in the shell, afaik the UTM uses ISC DHCP.

Seems to be the place of the ISC DHCPC config: /var/sec/chroot-dhcpc/etc

So, how to implement the right syntax?
