What impact does hard drive speed have on overall UTM performance?

Am re-purposing an older 3U HP server, and am wondering what impact hard drive performance has on overall UTM performance.  The server supports up to 6 drives, in various hardware RAID configurations.  However, six 10k-15k rpm drives add a lot of noise and power consumption.  Would scaling down to just a pair of 10k rpm drives in mirror mode really affect performance?  Using Firewall, IPS, Web Filtering, POP3 Proxy, Antivirus/Antispam/Antispyware.  5-10 workstations, frequent simultaneous streaming media (netflix, hulu, etc.), gaming (like steam), downloading, etc.  Server has two dual-core Xeon 2.8GHz, currently only 2GB RAM (hope to add more), with six 72GB 10k-15k Ultra SCSI 3 drives in RAID 5.  Or is this total overkill (other than the meager RAM)?  This will replace the current Astaro 8 running on a Pentium 4 desktop PC with 2GB RAM, which is peaking 100% CPU usage & memory usage averaging 65%.  Internet is currently 10mb cable, may upgrade in future.
Before I got the server, my plan was to use 3 older desktop PC's (Athlon XP 2000+) in Cluster.

    Hi,
    Unless you have:
    a. the HTTP Proxy Cache turned on, with a lot of users
    b. or are processing a LOT of mail 
    c. or have a LOT of http traffic with A/V scanning enabled

    then disk speed is mostly irrelevant.

    2GB RAM is low unless you are only using Firewall + IPS.

    BTW, an old 3U server is likely to use 200 or more watts, idle. If this is for home use, you could probably sell it and get something much quieter and more efficient.
