Rackmount Server with lots of NICs?

We've used a rack mount server from Penguin Computing for several years now that had a total of 8 Network Ports spread across several NICs including a couple on-board. Now we would like to get a new rack mount server for a fresh Installation but one of the things we want is more Network ports. 

Can anyone recommend a good server to use for this? 

Also, I figure we will at least be using dual NIC PCI cards in the server, but I think I'd rather use quads. Which NICs should I be looking at?

I'd rather not build unless I have to, but that's an option too.

Penguin Computing has a Relion 2800GT that although it appears to be made with GPU boxes in mind, it does have 6 PCI slots. Would filling that with quad nics be a crazy thing to do? Would it work okay?

    I've used a couple different models of Quad-Port Intel NICs with no problems (one PCI-X, and one PCIe).

    IIRC, the newer HP DL365 servers have 4 Broadcom NICs built in, plus 2 PCIe slots.

    At some point, you're probably going to exceed the bandwidth limits of the system... how much bandwidth are you planning on passing on each NIC?
    Have you considered using VLANs?
    What features will you be using? The IPS and some other features use a LOT of CPU during heavy traffic utilization.

    Note the Astaro/Sophos 625 has 18 NICs, and is rated at 10Gb/s throughput, but only 2.7Gb/s IPS throughput.
