Restore to dissimilar Hardware

I know this is a bit of an ask but is it possible to restore a backup from a different machine (including different NIC's)? Has anyone ever done so?

My old P3 will not run V8, I did try :-) so time for a new box but there is a bit of config in there that I would prefer not to have to recreate if I can avoid it.

Yes you can, but your interfaces will be messed up afterwards and you'll have to do some manual reconfig afterwards and potentially have to play "Guess Which New NIC is Eth0" to get into WebAdmin.
