I had one customer (that wasn't in a management / monitoring contract with us) that asked me to update their unit. I was able to take it from 7.104 to 7.301 in one step... if your are using a system that doesn't have a lot of resources, etc, I'd probably go step by step... this was a system with 1GB of Ram and a fairly fast P4, and they weren't using any of the features other than the firewall, IPS, and VPN.
