the P3 might be a bit a bit short on processing power for what you want to do. Both options will work, but I would recommend at the very minimum 764mb with preference to 1gb of RAM.
You are aware that a home user license is restricted to a maximum of 10 protected IP addresses, that means 10 addresses going out through the packet filters. Proxied and internally only used addresses like printers aren't counted under v6. There appears to be a bug in the v7b version of the license counting software, hopefully that will be resolved before it becomes a release candidate.

Your home network does appear a bit overly complex and your power bill must be quite large?

To give you an idea my network has 3 active PCs, 2 laptops occasionally, 2 printservers on the back of printers, a wireless access point/switch, a linux workstation and an experimental box used for either firewall testing or becoming a mail server. The CPU is very rarely stretched beyond about 2 or 3%, but my memory usage hits 80-90% with about 20% swap space. 
I run POP3, HTTP, HTTPs, FTP, SIP (but no VOIP traffic yet), 16 packet filters, a large number of time managed HTTP profiles, both antivirus, IDS, IPS, spam, DHCP server.
The SMTP proxy will require a local mail server to function correctly as far as I can see under v7. Under v6 it works and doesn't require a local mail server.

Unfortunately due to the hotspot and then my massive storage array (1.6TB and counting for DV video editing) I need something this complex. 

btw what kind of CPU are you using? [:)]

my main PC is used for video editing and photo editing, runs about 800gb of disk until I can afford to upgrade the photo and backup storage to a raid array.

I would like to speak on this I run my astaro v6 on a p3 866 512 and a 40 gig ide drive. Right now I use just the http proxy but when I bring my exchange server back on line I will use the smtp proxy. I also plan on playing around with the ids and doing at least one site to site vpn back to the office. I have experience with Microsoft ISA server 2004 and 2006. I ran ISA server 2004 and 2006 on the same p3 866 with windows server 2003 R2 enterprise editon.
ISA also does all the http caching and IDS like astaro my cpu never went over 8 percent and I always had over 250 megs of ram available. So I don't understand why astaro needs all of this power. Now my home network has 2 workstations and a laptop that are on the web surfing all the time. We use ATT callvantage for voip. We run exchange server, FTP, web, and Live communication server.  We also have a wireless access point and one print server. I most likely will not use the sip proxy I have a cisco 806 in the fron the my cable connection comes into and I hook our voip into the dmz switch. I do plan on putting in gigbit so I can run iscsi servers on some redhat boxes. If I do this I will create vlans on my gig switch and use astaro to route traffic for the vlans.

Under v6.303 running with 512. I was running

My ASG would run with about 80% memory used and 20% swap. CPU is hard to describe without the graphs.
I tried the same setup using a celeron 1300a and the 5 and 15 minute cpu utilisation ran at the same level for most of the day. HTTP Performance was degraded significantly.
My network has 3 active PC, 2 which game for hours on end and the other spends many hours on forums.

You will find that your memory requirements rise sharply as you use more proxies, especially the SMTP proxy.

Finally, I did some tests using the celeron 1300a and the amd 754 2800 and found the amd system ran cooler and quieter, so I stayed with it. Both were configured in the same case, same power supply and hard drive.
