Is virtual appliance right for me?

I've gotten a ton of help here and I thought this would be the best place to ask.

I have a brand new network I am building from the ground up.  We are using a new Dell server with 2 quad Xeon E5530's 12 gb ram running VMWare ESX 4.1.  Storage is handled over iSCSI by a QNAP TS-459U-RP with 4 WD 2TB drives in a RAID 6.  The virtual environment will host 2 servers initially, but that may expand to another 1 or 2, depending on the clients decisions.  VM1 will be SBS 2008 Premium, VM2 will be W2k8 Server STD with Blackberry Enterprise Server.

The network will consist of approx. 40 users with a 3 mb bonded T1 connection, all switches and most workstations Gb capable.

My question is, if I add enough NIC's to the ESX host, would the virtual appliance be capable of running adequately with all services enabled?

    Some limitations that I've seen with the virtual appliance are:
    1. Limit of four virtual NICs per vm imposed by VMware ESXi although VLANs work good to get around that if you don't need the "air gap", or virtual air gap at least.

    2. If it's a remote branch and everything is down, you can't remote in to start everything up, whereas with a hardware appliance you can get to it to get to the VM Hosts to start the virtual appliances.  Practically, this is most often a problem when you go to patch ESXi and need to put it into Maintenance mode and power off all the VMs rather than migrate them to another node.

    3. High Availability i.e. a cluster, doesn't work right, the moving virtual MAC address seemed to mess up VMware.  I had other (SAN) problems at the same time so this might not be a real issue.
