My Boss would like to know what a specific vpn-login download files from the company network.

is that possible and where can i see that?

    You could create a rule to log all packets from a certain IP, but that wouldn't tell you exactly which files were transferred.

    You could turn on logging on the file server, or you could run a sniffer.
