My concern is maybe this is happening because I had an entry under "Wireless Client List" for that ip. Changing the ssid that that user still shows the old ip since that's already on the "Wireless Client List" (if that makes sense)

Hi I have just seen the same thing.
I connected to a Wireless "Guest Network" 192.168.160.0. (on wlan0)
Then Connected to The Internal Wireless Lan Network 172.16.0.0.(bridged to AP LAN)
The Wireless Client page is showing as "Online" with an address of 192.168.160.20, when in reality it has an IP address of 172.16.20.6.
I have DHCP running on Astaro on the Guest network, but not on the Internal Network (which is a Win 2008R2.
