Hi,

what happens when I use the proxy and the Laptop is not behind the UTM. Is the Laptop able to fetch updates?

Yes. Both the UTM and the Endpoint connect to LiveConnect cloud service. They can transfer policy and logging even if you take your laptop halfway around the world.
