I dare say if you're a customer and wanting to migrate from UTM to SFOS then you'll be able to use myUTM/mySophos and manage your licenses.
New customers, everything will be done automatically, seems to be that licenses are tied to hardware devices (SG models have a serial in the bios) which then pulls a license when SFOS is deployed to it.
Virtual/Software installs that are new will get activation codes similar to now which will be managed through mySophos.
BETA instances shouldn't be in production, and if you're using them in production, plan to move them out or over to an evaluation instance!
