I get a time out when the proxy is on. I only have 1 NIC plugged in. I can see it try to connect to the POP server on the other side. DO I need packet filter rules? I should not need more than 1 NIC should I ?

'bridge' mode needs at least two interfaces plugged between your network and the upstream gateway (e.g.). 'transparent' mode means when traffic passes the firewall it will be redirected to the proxy without the need to configure the client
In your setup you should either use a second interface or try proxy arp. I'd recommend the first way...
