Simple IMAP Scanning ... Where is "Email Policy" Selected?

Long time XG Firewall user, running SFOS 17.0.3 MR-3, recently added a business rule for "simple" IMAP scanning (from an external email server). Followed these directions:
community.sophos.com/.../123274

I see three definitions listed under Protection > Email > Email Policies. "default-pop-av" looks fine to start. I would expect to SELECT this policy somewhere, but cannot find such a place.

FWIW, the following post has a screen shot of EXACTLY what I am looking for. Supposedly under Protection > Email > Scanning Rules ... but that path doesn't seem to exist.

QUESTION: as shown in the paragraph above, there must be a place to select WHICH email policy to apply. Where did the "Scanning Rule" selection move to?

    once you have configured the email policy under Email Section, go to Firewall section, select Business Application Rule > Email Clients template and then fill up all the required field (source: LAN; Destination: WAN). Tick IMAP and IMAPS and that's all.

    I do not like at all the way that it works. We should be able to assing profile like we do with Application, Filter and Web but this is still not possible.
