If you only use pfsense for VPN destinations, you might get away without policy based routing, and just using static route for the VPN destination.
From screenshot, it seems like connection to pfsense has its own interface.  Make sure to have XG firewall rules allowing LAN<->VPN-destination traffic in both directions

I would recommend to use Policy routing. Also as sixteen again wrote, make sure to create proper firewall rule.

From a VM that has XG as default gateway, try to access something defined into policy route and execute a tcpdump on that traffic on the XG to see what going on.

Also the Pfsense must have the proper routes to route traffic back to VM using XG WAN as next hop.

Based on that rule pictured earlier I think the XG is fine now and that I need to sort this out on PFSense for the return. Trace route shows the traffic moving from the VM > XG > PFsense > Out however if I try to go to google.com it fails.
