You've tried Network > Interfaces > VLAN > Add VLAN and adding it to your WAN port? Then you'd set up Routing and then Firewall rules to get the traffic moving.
I've never thought about a VLAN coming from the WAN, but my guess is you'll have two VLANs on the WAN and then two internal VLANs or Zones so you'd route from your Local VoIP Zone/LAN to your ISP VoiP Zone/VLAN, and from the rest of your Zones (WiFi, LAN, etc) to your ISP Internet Zone/VLAN. But I'm not sure about this part.

Please share a screenshot while adding VLAN on the WAN interface from Sophos XG and getting any error message on GUI.
If you are working in-house services like voice and iptv and want to access from outside from Sophos XG, you have to configure DNAT with Alias IP instead of VLAN
