I recently have a client asking me about these IPSEC modes

interface mode
tunnel mode

What kind of mode does sophos xg support?

Both. Sophos calls them "VTI / Route based VPN" and "Policy based VPN". In Product, they are called "Site to Site = Policy based" and "Tunnel Interface = Route based".
