Is it convenient to apply this in a company? Why?

Would it collect data that might exceed the rights of the workers in a legal sense?

It depends on your Country and your "agreement with your worker".

Most likely the usage of company devices is covered by a agreement between company and worker, therefore they sign something, that the Company is inspecting the traffic.
