Since HSRP is configured between two routers using a virtual router as a gateway for the LAN network, you can simply use the virtual gateway as a default gateway for your WAN interface on your XG firewall.

Hot Standby Router Protocol (HSRP) is a CISCO proprietary protocol, which provides redundancy for a local subnet. So you cannot configure HSRP with Sophos firewall. The virtual IP would be used when cisco routers are configured and a virtual IP is used in-case of redundancy.
So in an existing HSRP configured network, you can set this virtual IP as a gateway for your WAN interface on XG firewall.
