Are you running SFOS 17.5+ by any chance? If so you may want to roll back to SFOS 17.1.4.
People have multiple tickets open with Sophos regarding bugs with MTA mode. My best guess is that the new MTA added in 17.5 GA is modifying the messages in such a way that breaks proper parsing by an e-mail client, as well as breaking things like DKIM message content signing.
If you want to persist with 17.5 I'd recommend you open a support case with Sophos. The more people who do this hopefully means more resources applied to the issue and we get a timely update that fixes all these message corruption issues.

It does seem the issue is only observed after 17.5 beta and we would encourage to open a service request to get this investigated. As per our reported issue in MTA mode the gb2312 character set in subject line is not supported.
