Possible to log all detected applications without blocking them?

Apologies for this error. Let me do some testing and i'll update my post.

I've enabled this for about the past 24 hours but the Application log is still only showing blocked apps. Should I be looking somewhere else?

Please take a look at your reports tab and navigate to the Applications & Web section. Let me know if this is the information your looking for.

This is helpful and shows what I need. So is it normal for the Application log to ONLY show blocked apps, even when the Allow All policy is being used?

That is correct, this is currently expected behavior. Apologies for my earlier error containing mis-information. I was able to perform some internal testing and confirmed with a senior engineer.
