Hi, 
 
 basically you are talking about the deployment mode. 
 Sophos Firewall = XG Firewall. 
 Both run with the OS (Operation System) called SFOS. 
 
 So if you want to have a virtual appliance, you deploy the SFOS into VMware, KVM, Hyper-V etc. 
 You can install bare metal on intel hardware, then it is called Software Appliance.

I Have been using Sophos XG on Vmware ESX 6.5 and works fine with about 300 users . In past i have used hardware and performance is as good .
