my test-EAS Proxy is up and running, so far so good. My question: How many users can I connect to one EAS-Proxy? Who uses it with a significant number of users?

this is hard one, as this somehow depends on the device configuration and the email traffic within your companys (e.g. is Push used?, How often do users synchronize?).
Speaking to a developer on this, he said that the built-in EAS Proxy the SMC Server provides should only be used with up to 200 devices.
If more devices should be connected, the External EAS Proxy should be set up and used. This Proxy should also be used if several email server are used in your company. The External EAS Proxy is designed differently and therefore supports way more connections than the built-in EAS Proxy.
Please check the chapter 4 of the installation guide regarding the External EAS Proxy. and possible usage scenarios.
