Unfortunately I forgot the password for the sophos database user. Is it safe to just change it in AD User management?

Changing just the password you'll break the system.
You don't mention the version of SEC, but if you're running SEC 5.x you can just:
Re-run: "C:\sec_5x\ServerInstaller\setup,exe", select all the same options and you'll modify the install to use the new password.
So change the password for the account.
Re-run setup.exe
Choose the same options.
