I've found plenty of guides to change Sophos port 8194 on Windows, but none to change ports 8192 and 8193. I'm using Windows Server 2016. Is this possible? If so, how?

Although this might be possible it will likely break things and isn't supported. You could modify the hex key in C:\Program Files (x86)\Sophos\Remote Management System\mrinit.conf and run ClientMRInit.exe in the same folder. I would suspect if you change it here you will also need to change it on all your machines as they will still attempt to connect to each other on 8192.
