There is no such reported issue as of now of with Sophos Endpoint causing bluescreen that runs MS 2017. However, if you are facing any issue, we need to find the exact Sophos component causing the issue by using this article. Also, if you can check if there are any recommended vendor AV exclusions for Visual Studio 2017. If so are you able to implement these under the exclusions in Central?
