Application Control - Possible to detect all Apps and Block some?

In Sophos Central, is it possible to create an Application Control policy or policies to:

 

  1. Detect all applications in use by a user
  2. Block some of these applications

 

I know how to do one or the other, but not both together.  My goals are to find out whats being used in the environment and then block anything we don't want used.

    whether an application is controlled is set per application. Whether they are blocked or not when detected is a global setting, thus it's not possible to "converge" towards the final set.
    Applications can also be detected during on-demand and scheduled scans, you can check the results, authorize those you want, block everything else. This will of course cause some "portable" applications to be blocked but portable applications are rarely "wanted" in a controlled environment.
