cannot install server protection

the forum naming is confusing. You are attempting the installation of the Endpoint software, but the issue is Central-specific and Central is probably the better forum.

Looks like it fails to create a required directory - the 'Could not download software' immediately follows the line About to create directory: C:\\ProgramData\\Sophos\\CloudInstaller .... AFAIK the latter should be followed by Created directory: C:\\ProgramData\\Sophos\\CloudInstaller .... Can't say though what the cause is.
