Download time depends on a few things. If you have an old version and it's updating to the latest it can take a while; if you haven't switched you Mac on for quite a while (or had an active internet connection) it can take a while.
If it's truly stuck you can open Activity Monitor (type 'Activity Monit...' into Spotlight), find the 'SophosAutoUpdate' process and quit it and then start again (or reboot) and then kick off a new update.
Also depends on your internet speed. There are free internet speed tool that can tell you if you have a fast connection. If a big update occurs at a peak time (ie when everyone in your area is logging on to netflix :smileyhappy:) then connection bandwidth can be reduced.
It may even come down to your wi-fi connection (if you're connecting wirelessly to a router). Maybe your router's channel is the same as others in range of your computer and there is interference. There is a Mac Dashboard widge called 'Airlock' that shows near by routers and the channels. The screenshot below shows the majority of routers are using channel 7 (third column) and hence it would be better to avoid this channel.
