try the legacy adapters in hyper-v, they'll work for the moment.

I'm not sure if this still works with Windows7, but under XP you can press the ALT key together with PrtScr to get a screenshot of the current Window only. And, back then when had a Windows PC as my main workstation, there was an easy to use little program called MS-Paint in the Accessories folder that did the job of cropping images.
May i ask you to try these options and post the screenshots again?
